DIRECTIONS
Preheat oven to 400F°.
Prep the veggies. Slice the red onion thinly, halve the cherry tomatoes and julienne the red pepper.
Grease a large sheet pan with olive oil. Spread the red onion and red pepper evenly. Place the fish filets on top. Add halved cherry tomatoes, olives and feta in an even layer. Sprinkle with za’atar and drizzle with olive oil. Transfer to the oven and bake until veggies are soft, fish is cooked and feta starts to turn golden brown on the corners, about 20 min. Remove from the oven and let rest for 2-3 min.
Place about one cup of spinach on a plate. Place a third of the fish and veggies on top. Enjoy!
