DIRECTIONS
In four separate jars or containers, combine the quarter of oats, pumpkin puree, Greek yogurt, milk, pumpkin pie spice, honey and vanilla extract. Stir to combine.
Fold in the chopped nuts and seeds (optional).
Cover the jar or container and refrigerate overnight.
In the morning, stir the oats and enjoy!

*For convenience, you can purchase pumpkin puree in a can, alternatively it is simple to make at home! Simply cut a medium pumpkin in half, scoop out the flesh, oil slightly and roast in the oven cut side down until the pumpkin is tender, about 40-50 min. Scoop out the flesh and place in a blender. Process until smooth. Store it in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.
